Red cabbage or purple cabbage is a vegetable that is part of the very extensive Cruciferae family. They are called cruciferous because their flowers develop in a kind of cross.

They are spherical and are easily identified by their similarity to cabbage and by their unmistakable color, which in the longitudinal cut can be seen between white and purple, highlighting the appearance of the stem, the hardest part of the plant.

Thanks to its fiber, purple cabbage favors intestinal transit, although its sulfur components improve digestion.
