Cous cous is a traditional dish made from durum wheat semolina, which after cooking has an average size of just one millimeter in diameter. It is traditionally made with semolina corresponding to the hard part of the ground wheat, but which has not been converted into flour.

These ground beans are cooked, during which process they tend to swell until they increase in size and acquire their characteristic shape and appearance.
