The corn is a seed native to Central America that was the main source of food for Mesoamerican peoples thousands of years ago and that to date continues to be one of the main sources of energy in countries such as Mexico, Guatemala, Honduras, El Salvador and Peru.

The corn plant is made up of 5 parts: roots, leaves, stems, grains and ears.

Corn has a high content of complex carbohydrates, fibers, carotenes and, to a lesser extent, vegetable proteins. Its high fiber content is approximately 87%, consisting mainly of hemicellulose, cellulose and lignin. It also has a high starch content and a relatively low fat content.
