The endive is a vegetable of the family of the endive that has an elongated, cylindrical form and with one of the parts finished in tip. Its color is white in the stem area and yellow or red in the outermost part of the leaves.

The main components are water and fiber, so they have very few calories and a very low content of macronutrients (carbohydrates, proteins and fats). With a high water content of 94%, chicory provides the body with many minerals: potassium, calcium and phosphorus.
