Jicama is a leguminous, herbaceous plant, with a globular root, juicy and sweet. Its texture is crunchy and watery if consumed raw. It is native to Mexico, where it is also known as jicama, Mexican potato or Mexican turnip, and is also grown in South and Central America and California.

 

Its root is the only part of this edible plant, and it is consumed as a fruit or vegetable. It is a seasonal product all year round, but its best time is from December to June in the northern hemisphere.
