The potato is an edible tuber native to the mountainous regions of the Andes in South America. Today, the potato is an international staple food, occupying no less than the position of the fourth most widely distributed food crop in the world.

This tuber is composed of 80% water. Its texture is soft and its coloration can vary between white, brown, yellowish and pinkish tones.

The Atlantic potato is round, with beige to light brown skin, dandruffy, white flesh. The flowers are bell-shaped blue, the fruits are green and globose. Its culinary quality is high, because of its dry pulp it is very good for chips.
