Pumpkin seeds are edible and are consumed roasted, especially in Mexico and parts of Guatemala. They are prepared by soaking them in water saturated with salt, and toasting them on a griddle with salt. They are also used to prepare a variety of mole known as pepián or pipián.

Depending on how they are prepared, and after having been cooked, the seeds are presented with or without the shell.
